No preferential treatment for our wild little southerner.
As soon as the grapes are chosen, they are quickly sorted: admirable hundred years old Grenache Noir, facing the East, protected from nasty winds… They then are carried straight to the cellar to be treaded when the vat has freshened up! A layer of soft Merlot, from the center of the vine is then added. After the malolactic fermentation, no fuss! No barrels! Straight to the bottle!
