The estate's grand wine, Chante Cocotte, is a 35-year-old Merlot, planted on
draining alluvial soil at the bottom of a small valley. Sorting is done in the vineyard at the very beginning of
maturity, followed by sorting on a table. The grapes are brought by gravity into the
stainless steel vats and punched down morning and evening. After 25 days of vatting, we
blend in 10 to 15% Cabernet Franc, depending on the
vintage. This blend is aged for 18 to 24 months in French oak barrels that are one to three years old.
Chante Cocotte captivates with its fruity nose and smooth palate. It finishes
long, sapid, flavorful, complex, with fine tannins. Its unique aromas
are cade, cedar, and eucalyptus.
